How to Make Hyderabadi Chicken Biryani

Introduction

Hyderabadi chicken biryani is a flavorful and aromatic dish that originates from Hyderabad, India. This dish is known for its rich and spicy flavors, tender chicken, and fragrant rice. In this blog post, we will learn how to make authentic Hyderabadi chicken biryani step by step.

Ingredients

  • 2 kg chicken
  • 4 cups basmati rice
  • 2 cups yogurt
  • 4 onions, sliced
  • 1 cup cooking oil
  • 1 tablespoon ghee
  • 2 tablespoons biryani masala
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon turmeric powder
  • 1 teaspoon red chili powder
  • A handful of mint leaves
  • A handful of coriander leaves
  • 4 green chilies
  • 4 cinnamon sticks
  • 4 cardamom pods
  • 4 cloves
  • 4 bay leaves
  • 1 teaspoon saffron strands
  • Salt to taste

Preparation

1. Wash the basmati rice and soak it in water for 30 minutes.

2. Heat oil and ghee in a large pan. Add sliced onions and fry until golden brown.

3. Remove half of the fried onions and set aside for garnishing.

4. Add ginger-garlic paste to the remaining onions and sauté for a minute.

5. Add chicken pieces to the pan and cook until they are browned.

6. In a separate bowl, whisk yogurt and add it to the pan. Mix well.

7. Add turmeric powder, red chili powder, and salt. Mix until the chicken is well-coated with the spices.

8. Cover the pan and let the chicken cook until it is tender and juicy.

9. Meanwhile, drain the soaked rice and boil it in a separate pot with water and whole spices (cinnamon sticks, cardamom pods, cloves, and bay leaves) until it is 70% cooked.

10. Once the chicken is cooked, remove it from the heat and set aside.

11. In a small bowl, dissolve saffron strands in a tablespoon of warm milk. Set aside.

12. Preheat a large pan and layer half of the partially cooked rice at the bottom.

13. Sprinkle half of the saffron milk, fried onions, mint leaves, and coriander leaves over the rice.

14. Place the cooked chicken on top of the rice and spread it evenly.

15. Layer the remaining rice on top of the chicken and repeat the process of sprinkling saffron milk, fried onions, mint leaves, and coriander leaves.

16. Cover the pan with a tight lid and cook on low heat for 10 minutes.

17. Turn off the heat and let the biryani rest for another 15 minutes.

18. Gently fluff the rice with a fork before serving.
